Soy Sauce Brewery Tour

— Founded in 1872 (Meiji 5) —

Founded in 1872, this is the only remaining soy sauce brewery in Nagato City. For over a century, the brewery has continued to craft soy sauce using traditional methods, including fermentation in large cedar barrels—a technique that reflects Japan’s enduring craftsmanship.

During the tour, guests can see firsthand how the dedicated team works together with a deep commitment to flavor, following manufacturing processes passed down through generations.

Participants can try hands-on tasks such as kai-ire (mixing the mash) and fune-shibori (pressing the soy sauce), gaining a deeper appreciation for the richness that comes from careful, manual production. The tour concludes with a tasting of soy sauce and miso.

The brewery also offers a selection of products for purchase, including soy sauce, miso, other processed goods, original tenugui towels, and tote bags. As a special gift, participants receive either the “Shin-chan Set” or an original tenugui towel.

Enjoy a moment immersed in Japanese tradition and craftsmanship.
